200ml recently pressed lemon juice
500g caster sugar

To make the Drink (produces 850ml, serving 10)

100ml dry gin
150ml peach schnapps
200ml citrus syrup (from the recipe above)
Fresh cranberries, as a garnish

Instructions

Making the Syrup: Place all the components inside a pot, bring to a light boil, stirring until the sugar dissolves. Next, remove from the heat and leave to reach room temperature entirely. Transfer to a sterilised bottle, close it and store chilled, where it will keep for around one month.

Preparing the Batch Mix: Pour the specified liquid ingredients into a large bottle, leave to sit for one hour, then pass it through preferably using muslin, so it's perfectly clear.

When ready to serve: Measure 85ml from the batch mix to a cocktail shaker packed with ice, and agitate lightly for a minute to chill. Filter into an chilled martini glass or similar, garnish with a few cranberries adding the final touch using a light spray of mandarin oil over the drink.
